You could. However, the meat in question is inherently pork. That creates a problem.

If she is following the dress code, and there have been no complaints by customers or other staff, then this seems like something that might not really be an issue?  There are just too many variables here to give a good answer that a lawyer would approve, as well as too many unknowns.

You have to think of certain things that are involved here.  You have a very strict community of various kosher certifying organizations.  Since they prefer to play things safely, even if the meat was raised as kosher as you can raise it, I am not sure you would find the certifier who would be willing to cross into
