Yeah maybe I was unnecessarily snooty. It's slightly more fair to say that Americans are used to the taste of beef for various historical reasons, so it's a departure and might come across as strange, since it looks like beef when cooked.

I agree, but if I were at the meat counter and didn't know better, I might say to myself 'I have no idea how to cook a rack of lamb, isn't that fancy chef stuff? I'll just get a steak'.

It has more flavor than beef. Lots of people are put off by things that don't taste like bland. Plus, it's not the cheapest cut, and since it's not popular already, most people have no idea what to do with it, so why buy a $30 hunk of lamb leg for experimentation purposes.

We were always told as kids to not play around with the big snapper turtles that would sometimes wander through the neighborhood. They were about the size of a tire and supposedly capable of biting your fingers off if you decided it might be fun to play feed-the-turtle.
