It could be how you’re exposed. Peanut butter, whole peanuts, peanut toppings, food cooked in peanut oil, etc. are different ways to injest peanuts, but probably result in different responses based on the amount and how quickly it breaks down in your system.
IMO, I think it’s because certain foods, including peanuts and wheat, have become a major part of processed foods. If you made those same foods at home, there would be little to no peanuts or wheat in them, but if you cook and use a packaged product, you’re going to get these foods at much higher rates then normal.
