This has already been explained in-canon. The Sarlacc consumed a bunch of burning debris from the sail barge. This caused it to vomit up its own stomach and die, something seen in nature on occasion.

I mean, it’s very likely canon within the multiverse, just not fully synched with the sacred timeline.
