What IS central to her duties? Her duties are basically (1) to explain a safety procedure (not on every flight), and (2) to serve food and drinks. The latter centrally include alcohol.

But I can also understand her co-workers who didn’t like picking up her slack. And I can understand employers who want workers who are on board morally…

I agree. I think that if you take your beliefs seriously enough to take risks for them, then be prepared to face the consequences. If I didn’t want to serve dead animals, I probably wouldn’t be a server in a restaurant that served them.
