You are right, 2 hours is not enough to defrost a whole turkey or even a chicken tbh, but I find my bird defrosts better when I leave it on counter for an hour then put in fridge, rather than frozen straight into fridge. This is not the quick method - the cold water bath is the best and safest quick defrost.
Your fridge is likely too cold and it’s ok to defrost a bit on the counter, not to exceed 2 hours.

I live in California and I thought we had good Indian food too. I certainly enjoy eating it, nothing tops an Indian buffet lunch special. But according to my Brit-Indian friends US Indian food is of fast food quality, not hot enough, not enough spices - basically watered down.
