Actually the sport package on the awd sedan is only an appearance thing. The sport package on the awd coupe still includes the big brakes and LSD. The only thing it doesn’t have vs. the sport package on the rwd is the quicker steering rack. 

I’ve seen it on various 4Runners, the FJ Cruiser, and it’s probably on some of their pickups too. It’s not specific to the off-road trims.

You’re thinking of a different switch that’s activated with a key to disable the passenger airbag. That was required by the US DOT for a while on 2-seat vehicles. Before the weight sensors you described became more common. I had a ‘99 Miata with a switch like this.

Toyota has a curtain airbag defeat switch on some of its trucks & SUVs. GM probably doesn’t want to offer such a thing and the potential liabilities it would open them up to.
