The problem, though is that food sensitivity or celiac awareness makes gluten free a fad and then most of the people claiming intolerance are just caught up in fad diet hype, and don’t really benefit. In fact, some gluten free foods might not be as healthy as regular, wheat gluten rich, options.

Most people demanding gluten free do not have celiac disease and can digest wheat gluten.
