I’d be very interested for someone to do a real deep dive on the differences between the companies that do offer better compensation/benefits from the ones who don’t. The article made it clear that it’s extremely varied across the industry. Why is that? Is it dependent on location? How successful a brewery is?

Yoir first point is flat wrong. A good business makes sure they’re putting a well trained employee to serve their customers. There is no reason to expect that they wouldn’t.
