Frankly I don't even care if they are all that passionate. I get that for most it's a job, not a career and they are working toward something else or are just trying to make ends meet. But that said, being rude is a terrible way to ensure your living wage.

Their job is to serve. I'm sorry but lots of shit happens in people's lives every day, don't carry it to work with you, same as you don't come home and smack your wife around if you had a shit day at work. If your job is to be friendly and cordial, I should be able to expect that without making excuses for you.

You're reading wayyy too much into my not tipping. I'm out with friends or loved ones I dont' really feel like sitting and discussing how I can have things improved with my local manager at whatever place I'm at.

If it's a big portion of their income then they should have been better at their job. I'm not saying "Oh you brought the wrong thing" I mean I've had some genuinely shitty waiters/waitresses who I have not tipped.

Eh, I've not tipped before. I'm sorry I don't feel tipping is mandatory, you are in the service industry, if you give bad service I give a bad tip.
