Not my favorite adaptation by a long shot, but I was half disappointed that Ender's Game dropped the subplot of Ender's brother and sister taking over the planet with their blogs.

I really don't think this has changed at all though, there are so many old movies that relied on blowing shit up as well, usually at ten different angles for 20 minutes straight while stunned actors looked in silence. People just tend to remember the good movies over the bad ones when nostalgia kicks in.

Alternatively, doesn't it make sense that since the Wall is made of ice, and dragons breathe fire, a horn that can control dragons could be used to bring down the Wall (by melting it)? I haven't read the books, so I may be missing some fundamental point of lore that makes that thought moot... but since we're talking

Um, if you're hinting at what I think you're hinting at, then yes, Jon's parentage will be extremely important to the resolution of the story. Can't really imagine Martin not making it official before the end.
