We don’t always know why people are killed. Tracking their demographics can still tell us useful information about the groups they belong to. Statistics (generally) give us information at the global, not local, level.

I guess, my actual point is to push back on the definition you gave of vegetarianism (obviously not to push back on what it means to you, but on whether it’s the relevant definition for most people). I think it makes more sense to define vegetarianism as not eating meat, than to include motivations in it.

But I am a vegetarian mostly because meat is gross. Like, if the meat industry etc were all utopian, I’d still be a vegetarian. I’m sure I’m not the only one...
