Honestly I thought all the Zoltron gags were kinda crap. "Wow, this extremely expressive and realistic robot totally isn't Steven, the kid I interact with constantly and know the face and voice of!" Like, I get how that's part of the joke but it was just too broad to really do anything for me.
I'm so used to how SU operates that I really expected them to discover some sort of shocking truth in the journal and was waiting for the other shoe to drop. Instead it just kinda was like "Then he became a library, the end"

It was interesting that you commented that "Love Like You" seemed to be coming from Rose's POV. I thought it was meant to be a reflection of Steven's own guilt in contrast with how happy the Crystal Gems were to see him.
Honestly, almost every time any Ruby is onscreen its like Rebecca is reminding the audience that yo, gems are super gay guys.
I really don't know how they find these people who sound eerily like a what you'd think a fusion of two voice actors would sound like, but they've pulled it off twice now (Stevonnie being the other one). Interestingly, the fusions between pure gems don't seem to work that way.

I'm not actually saying it was a good idea - I think she might have been afraid of Pearl hating her if she told the truth. Either way it certainly backfired when she got with Greg. If she had just told her she wasn't interested from the beginning maybe she wouldn't have felt so betrayed.
I always got the vibe that she knew about it but thought addressing it could only hurt Pearl's feelings.
