My experience is that better restaurants temp their steaks to the “true” definition of rare, etc. I prefer a “rare” steak with the seared edges, but sometimes when I order that in a nice place, it’s almost alive. I’ve found that what I actually like is a “true” medium rare that cooks at a shit steakhouse would call

I’ve never once heard of this. Is it regional?

I’m the opposite because I don’t want to taste saw dust and have to dump a jar of A1 on a steak that was cooked on the wrong side of medium

I laugh at people who get angry about being cut off in traffic. If you’re going 65, okay that’s dangerous but at 40 - let people in. You aren’t going anywhere.

Yeah, if were gonna be angry about this then there is no hope. Even if this was just a PR move, if even 10% of what he saw sinks in - that’s something good.
