Water is better. Most race cars run all distilled water. The only issues are premature water pump failure and corrosion. Neither are a big deal for a race car. Both issues can be fixed with an additive.

It all comes down to the specific heat capacity of water vs glycol. That’s why you don’t see pure glycol being run and mostly a 50/50 mix in street cars.
