Boeing's uses an electric gel sandwiched between two layers of glass. When the voltage increases the glass gets darker. Boeing's system uses a manually operated switch but I'm sure it'd be no big deal to connect it to an ambient light sensor instead.
And on most cars you have to actually switch the feature on.
