When I worked there (01-02ish) they used a carton of egg product for the folded eggs. I’ve seen a similar thing sold in grocery stores, called Egg Beater. Basically just premixed eggs, although I’m sure there’s some preservatives added.

At least in the Egg McMuffin’s, they just crack an egg. They’ve been doing this since way before Panera existed. Their folded eggs may be different.

It’s still an egg, even if you add other stuff to it. Butter (containing cream & natural flavors), pepper, and salt alone would add 5 in addition to egg.
