Why not replace that egg with tempeh, seitan, beans, or tofu, and the cheddar with vegan cheese or tahini, and skip the cholesterol and animal cruelty? (Proud parent of an extremely healthy 2-year-old vegan kid here, as our non-vegan pediatrician would attest.)
