I think what she’s trying to say is that progressives often encourage people to “trust the science” on issues of climate change, covid, etc. and yet they refuse to accept the scientific fact (in her view) of two and only two genders, and therefore progressives are hypocrites.

The scare quotes are simply there to tell that she is as ignorant of punctuation as she is of science
