Sure, but then you can't use Xposed. I don't want to get attached to particular Xposed tweaks, then be unable to use them for months.
It's not just about rooting 5.0, though - Xposed is currently incompatible with Lollipop because it relied on the Dalvik runtime. At some point, it will be updated, but right now, there's no timeframe.

I almost prefer convenience of charging to actual battery life. I had a Pebble, and the battery life was great, but the proprietary wired charging annoyed me. Personally, I don't wear my watch to bed anyway, and if it's going to be off my wrist, it may as well be charging.
I can't go back to a Pebble, if only because I find voice commands and input to be way too useful. But yes, Android Wear is still very much a 1.0 product with several frustrating quirks.
