A re-vamped version of ReBoot could work, The characters were always meant to be anthropomorphic computer processes. The writers might need to be a bit more computer literate than the last batch of writers to keep pace with the the increased level of computer knowledge the general public has, but it could still work.

Wouldn't this be an ironic way for Simon and Betty to be together? Instead of being together as Simon and Betty, she gets to be immortal and insane along side him as Ice King and Magic Woman.

To me, slice of life means a slice of life in the world the series inhabits. Depending on what sort of world that is, what is considered pedestrian may vary hugely from what would be considered run of the mill in our world, but it could still be called slice of life.
