Agreed. Whether it’s Northern NJ, New York, probably Philly and Boston predominantly, and other bigger cities, it’s the local delis that any self-respecting sandwich is made. Italian delis preferred, with the caveat that the fresh mozz is hand-cut, and not cut with a slicer (sacrilege!)

There's a similar type of model in academic journals and Open Access to articles. Currently, it's a pay-for-read model, where a reader can pay $5-$50 to access an article electronically (vs. a paid subscription/yr, which can cost hundreds).
