Whisks suck to clean. If you’re just whipping a few things, like 1-3 eggs, I prefer a fork. I rarely ever make whipped cream or whip egg whites to foam. So yes. I’d have a harder time giving up the microplane or a silicone spatula than the whisk.

I’m not sure (but willing to be convinced) that vegan diets are the staple.  Vegetarian, sure; a lot of the cultures with a higher proportion of vegtarians still make plenty use of dairy.

OMG Defonte’s! For a while in the mid-aughts they tried to expand, and they had an outpost in Manhattan near my office. They didn’t make it; they were a little expensive for the neighborhood, I’m sure their rent was ridiculous, and the neighborhood lost one of its main employers a couple of years after they moved in…
