This isn’t about my feelings, I have no problem with Fieri nor have I eaten at any of his restaurants. And I know the impact he had on the places in DDD. Its not about his show or the concept, the hate really came from Guy’s American restaurant or whatever it was called in Times Square that was everything bad about his persona/brand wrapped in a terrible, overpriced, worse version of Hard Rock/Planet Hollywood/Tchotchkies.

I’ve been known to do a poor man’s carbonara or kind of alio e olio with bacon. The key is to top with some crispy panko breadcrumbs that have been toasted in olive oil or butter.  Makes it feel almost fancy

and you can make grape nuts by grabbing a handful of gravel but no one wants either of those when you can have pancake cereal

One of my local delis take order by text message. It’s as easy as ordering online and no chance of screwing up an order by phone. Granted the orders are fairly simple being it’s a deli but wish more places did that, as well.

I don’t think he said 2:1:1 in the video, just used the two different sides, but I agree with you that its unlikely 2:1. The two jiggers I have are both 1.5 oz/1 oz. And as luck would have it, that makes my preferred Negroni which is 1.5:1:1

I do this if I need to cook a large quantity and have the time (7 yr olds dont like waiting 20 min for bacon) but I don’t bother with the rack. I don’t see the benefit and they are a bitch to clean

In NY, end of last week, shelves were empty of all flour of any kind or size. This week, plenty of every type and brand of flour. Still no yeast anywhere to be found. After making dough for a tomorrow’s pizza night, I’m down to my last little packet of yeast.

As one of the country’s foremost fan of waffling things, I actually waffled mac and cheese this weekend. I used leftover mac and cheese, but i think next time I’ll add more cheese directly to the waffle iron and to the top of the mac and cheese ball to amp up the frico crust. Real ciabatta is a terrible choice, way too crusty that the egg would slide right out on the first bite. The softish oblong rolls they sell in supermarkets and call “ciabatta” are satisfactory.  hard roll or kaiser roll is the platonic ideal medium for a BEC
