I’ve never seen bone-in, skinless turkey breast. And usually those boneless breasts wrapped in netting have skin too. only time I get good skin on chicken is using a higher temp - over 300.  I’m smoking my turkeys on a Pit Barrel Cooker this year (first time) so hopefully i’ll get some good crispy skin
