@redhead_runner: Your coach sounds awesome! I run a lot and am generally pretty active and I seriously can't get by on less than 2000 calories a day.

@likepenguins: I've served it to many non-leafy green lovers who have subsequently asked for the recipe. Letting it rest in the fridge for a couple of hours so the flavors develop is key.

@shellybean: Which is of course, why it's so yummy. But still. Prepare your food at home is a big one for me.

@redhead_runner: Wow! I never thought about my period=loss of nutrients.... that's a great reason to a) cut myself a little more slack for feeling sluggish and b) load up on the healthy stuff. No wonder I'm so hungry during that week!!

@LeRollingStoner: That sounds really good! Hmm...I wonder if it would be good with Greek yogurt...then it would have more of a sour cream taste...

@labeled: CRAZY AUNT KANYE: I don't think you're being preachy. I'm a bonafide health food nut and I love talking about this stuff- I'm sure I'm commenting to an annoying degree on this post. But I love talking about healthy food, primarily because I end up with so many good meal ideas when the subject comes up. :)

@labeled: CRAZY AUNT KANYE: Not that I know of. This was a number of years ago. Now they just do a sort of ghetto atkins which doesn't work b/c they end up "cheating" too much and still having carbs, which foils the diet. And it backfires b/c they won't keep good stuff like oatmeal in the house but will cave and eat

@Dauphine: vegan brioche? Interesting!

@shellybean: not that I'm a vegetarian, I just wanted to compare vegetarianism to someone who eats a low carb diet in that way....

@labeled: CRAZY AUNT KANYE: I think you can definitely have a delicious and healthy low carb diet that is full of veggies. It's not my cup of tea, but it is certainly possible if you apply yourself to making sure you get all of your nutrients (actually I'd say the same thing about being a vegetarian).

@likepenguins: What if the Kale was covered in buttermilk?

@slowpoke.r: My favorite way to make risotto is to mix in about 1/2 a can of plain canned pumkin (obviously not pumpkin pie filling), then top it with roasted red pepper.

@Ruby_de_la_Booby: Yeah one of my biggest reasons for not running a full marathon is that I get really bored once my runs go over 2 hours. I don't think I have the mental discipline for 26.2. :)

@slowpoke.r: Kale is awesome roasted. My other favorite way to cook it is to make Kale Spaghetti. Half the time though I don't bother with the pasta, but just make the Kale portion of the recipe as a side dish.

@likepenguins: I'm southern and I have to pick and choose my greens. Collards and turnip are my friends but mustard greens are way too much for me.

@sumerfish: beans are super cheap and really good for you!

@banana_grabber: I'm somewhat anti-red meat (saturated fat from animals is bad, mmm'kay) but I tend to look at meat and carbs the same way- I don't go out of my way to make sure I'm getting enough of them. (I do make sure to have protein in all of my meals for satiety, but I often choose to get my protein from beans
