Ugh, is there actually a perfect stamp for Pokedex entries? I stopped when they hit level 10 because you get credit for it. There’s maybe 6-8 Pokémon that spawn there, I have no idea what they were doing. That is a crazy grind to me. It’s like leveling up your starter to level 40 before getting to Viridian City the first time.
What are you talking about? This is not an open world checklist game, it’s akin to the Breath of the Wild or Red Dead Redemption in that you’ll get lost in the exploration of the world and naturally end up with 80-90% completion by the end of the game without it feeling like a grind.

I didn’t realize there was a cap on slots, I stopped after ~20. It was enough that I could keep my core items and not run out of space while collecting a regions materials between stops at camp.
I think people are looking at the side quests as something you need to finish immediately before advancing and that’s the wrong way to look at them.
