Wiping the data on an iOS device from the 3GS on takes about he same amount of time as rebooting it. It simply shreds the encryption key and reboots to the setup assistant.
I can't really speak for iOS. The couple iOS devices I have, I've never wiped other than OS updates. However on Android, a factory wipe takes about five minutes from process start to phone reboot. I would imagine that it would be very similar in time to accomplish. So, wipe it when you get to the store.
"Fast", as in a matter of seconds. "Formatting" in iOS (since the iPhone 3GS) simply erases the old encryption keys, rendering all previous data worthless, and resets the file system.
Since all the good options are already known, I'm thinking of trying something new next time. I plan to end with "....or else." ;)
