There’s always going to be compromises. The point of her recipe is no roux, but you want to replace the an important ingredient that makes up for it. Like others suggested, use lactaid, or google: “vegan gluten free cheese sauce” No snark, but I don’t know everything, Google can likely help you more.

I’d recommend making a roux with flour and butter so you have a thick base to start with, which will give more body and flavor to the sauce to compensate for the lack of fat in almond milk. Also, you can add pretty much any cheese that you like, though soft cheeses will melt more easily.

This is similar to the keto version I make on a regular basis, except I sub whipping cream for milk, no butter/cornstarch, add some cream cheese, and sub cauliflower for pasta, and add some bacon.
