I had the same stuck throttle issue once racing dirt oval. It was in a heat race, once I fell out of a qualifying position I pulled off. But until that time I did the same kill switch trick. Unfortunately there was a delay from when you threw the switch + when the car fired up-so it made it a bit tricky....
