Au Gratin usually refers to a cheesy topping (though it can just be bread crumbs or anything that makes it have a crispy, browned crust on top), while "scalloped" is a white, milk-based sauce and usually does NOT include cheese. There are regions where they are used interchangeably.

Quinoa can be bitter. I agree with the person who said to try both red and white and see what you prefer. I also find that it helps to rinse it before you cook it (I use a very fine strainer basket and put under running water). I always file as soon as I get my W-2, so once tax day actually roles around I'm usually like "oh, yeah, taxes. Been there, done that." This year I got enough back to enjoy the extra $$ but not so much that I want to change my filing status so that I'm not giving the government a free loan.
