IIRC, there is a chance you can stop its spread in children and save their sanity/life, but it can't be stopped in adult sufferers. But I don't recall the effects developing as fast as they are in Jorah.

My stray observation responses: I think the death of Ser Barristan leaves a Tyrion-sized spot open for a wise, Westerosi advisor. Also, I think Melisandre knows that Jon has king's blood running through his veins and wanted to see if she could make a killer smoke baby with him, maybe one she could send to Winterfell.
