I’ve always whipped egg whites in glass bowls. When I was taught how to do it, I was told that you have to wash the bowl right before using and dry thoroughly. That way you can be sure there is no oil residue anywhere. I don’t doubt that copper or stainless work as well, I was just taught to use glass.

You really can’t ever be “ready” for an Andrew, Katrina or Hugo...the only thing you can do for storms like that is get out of the way, and hope for the best. As much as Floridians (and I am one) dismiss Cat1 storms as “minor,” once that puppy hits Cat3 they ramp-up the preps pretty quickly.
