These days, almost all automatic watches in the $500-$5000 price range use varying qualities of a couple basic ETA watch movements. Watches like baseline Panerais, Bell & Ross, and Kobold almost exclusively use ETA movements. You're buying name and exterior design with most watches these days.

Eh, with the right OS, it could work well. Touch for when it works well, and keyboard/mouse when that works well. It could make the most common and basic tasks like opening up commonly used applications and basic interaction much easier and simpler with a touchscreen.
