I have never in my life actually met a waiter who has spat in someone's food and I've worked in four different establishments with hundreds of co-workers.

I normally ask the kitchen because as the article makes the point I don't want someone dying in the restaurant. You'd be surprised how much stuff a kitchen buys in that isn't suitable for certain allergies

One further caveat. Can people who are not allergic or insensitive to gluten please stop requesting gluten free. I am tired as a server of trying to ascertain whether the minuscule amount of gluten contamination in a dish is a problem or whether you are just being picky because of some diet fad.
