I don’t see why Latino wouldn’t be appropriate. In most gendered languages, including Spanish, the male pronoun is the dominant, but isn’t meant in a sexist way. I understand someone maybe seeing it as such, but unless the actual language the word is from changes, I don’t see a need to pre-empt it in English. And
