To each their own. Again, brining for MANY people makes meat taste like a wet sponge. The technique you describe above, is something I used to do for 10+ years. It still tastes like a wet sponge.

Yeah, back in my childhood (I’m showing my age: that’d be the 70s & 80s), dry turkey was the norm. I wasn’t really a fan. When I finally had a properly cooked turkey (my first was brined & fried), was when I first realized I actually did like turkey. Thank god for food science!
