In regards to #2, wet brining has *always* made meat (chicken, pork) taste like a wet sponge. And yes, I do it right, and have been for over 10+ years. I’m done with wet brining. Again, read Kenji’s article which I agree 100% with.
Love ya Alton, but I’d only brine and use this method if I had forgotten to take out the frozen turkey.

Denim is meant to be worn long term. Washing them after every use, even every other use, is way too often for Denim. So for me, Jeans? I will wear them 2 to 3 weeks before a wash. Just gotta pass the smell test.
I love Alton Brown, but even he has changed his tune on stuffing and even provided a “Good Eats” method on Food TV to accommodate his change of mind. That being said, Kenji @ SeriousEats, CooksIllustrated, and others (who are often aligned with Alton Brown) all have also provided a method of Stuffing in turkey.
