Watch the prequel Fate/Zero first. It comes first temporally, also they focus on more than one person so it only takes 1-2 episodes to get to the point. Fate/Stay/Night is focused around one character (Emiya) so its less interesting because it takes many more episodes before his character becomes half way interesting.
