Gruyere is a solid addition to any cheesy dish, and is the basis for fondue. I prefer it to Emmenthaler, but both are good. “Swiss cheese” is more than the stuff they slice for sandwiches.

There is a place near us that sells French Mimolette. For years, it couldn’t be sold in the US (the rind ages with dust mites). It is back, and it is spectacular.

The part of the brain that processes these types of things like an adult simply isn’t developed in adolescents. It kicks in some time in out mid-20s. It’s why kids take risks that adults don’t: they only see the upside, they don’t appreciate the danger, the consequences or the possibility of failure.
