Because those trucks lack the ability to connect to hydrants or put out anything larger than a small aircraft/ vehicle fire. they normally carry just 1500-2k gallons of water and around 300 gallons of foam suppressant. plus the vehicles often have only 5 seats so there isnt a capability of carrying a large crew to use

pilots aren’t dozing off or reading the newspaper while the aircraft is on autopilot though. they are actively monitoring systems and are ready to take over if the need arises. your average driver will likely be reading the paper/eating/texting/putting on makeup etc. and will be completely unprepared if the autopilot

As a pilot and someone who worked ground crew for a banner operation I assure you it is much more the weight/friction than fragility.
