Lobster tails are an ideal candidate for an alternate slow low cooking (Sous Vide). I make Lobster tails in a semi Beurre Blanc sauce - I use butter White wine and a little vanilla to gently cook them. Serve it over home made pasta with the sauce from the bag.

After being asked for clarity. I have several Cast Iron pans - all of them are “non stick” now. The application of fat and then baking in an oven causes the fats to form long chain polymers. This surface is tough and non stick (ask anyone who had to clean commercial equipment how difficult it is to clean this film off

BUT pan spray is great for “recoating” a cast iron pan... The polymerisation is the surface that is non stick in this application.

Small suggestion just prior to mixing with salt heat the herb/spice in a dry pan. This helps release some of the oils that make the flavour.

Growing up in the UK the peanut brittle their was “sans” bicarbonate. Having tried both I prefer it without the bicarb. It seems to add a “sour” taste - not a fan of that.
How about “kicking it up a notch” ... make the brittle then pour over melted Dark Chocolate nom nom....
