The main problem with electric stoves isn’t that it’s slow to heat, it’s that it’s slow to change temperature. Gas and induction both can instantaneously change the temperature being provided to the pan. Standard coil electric has severe lag.

That is super interesting, and I’m glad you posted it. I’d like to switch from gas to induction, but it would require an expensive electrical process to do so. This would eliminate that hurdle.
