I would love it if you could use some of the DJ apps out there for iPad like djay to play music from iTunes in the cloud or even Spotify. That would be awesome. Although I can see why it would be hard to 'scratch' a record in the cloud.

I tried downloading a PDF to my iPad home screen the other day that sits on my dropbox. It'll only place a web app short-cut to the pdf and if I want to view it, I have to be online. Dumb dumb dumb.
