As a chemist I would disagree with you. Oils are only sparingly soluble in water, even hot; they have a stronger affinity for the non-polar chemicals in the paper than the very polar water molecules. For example, there's a lot of research being done on cafestol, an oil in coffee that's suspected to raise LDL levels

I have been doing this because I make one cup a day ... in the morning so I can make iced coffee. Instant coffee didn't taste good, and using an automatic coffeemaker made too much. I am not spending $120 on a single-serving machine. So, I boil the water in my electric kettle and slowly pour it over the ground coffee

I've been doing pour-overs for a long time now. It's the only way I do my Doubleshot coffee, here in Tulsa, OK. I said goodbye to the French press a long time ago. :)

Fancy drip if you ask me. And this nonsense about special kettles is bunk. Pourover isn't new, and it isn't fancy (and I'm dubious about the claimed Japanese origin). My local grocery has a $2 plastic filter holder that can be used in the same way; and usually is if you want quality.
