What I find interesting about the tv show is how much characters that weren't POV or never will be are more prominent. I think Stannis is purposely not supposed to be inspiring or anything. He's nothing like the royal Julius Caesar, he has zero charisma, but is a straight, hard, righteous man. And I think he can perfectly fit: he looks a bit like a joke, but I'm pretty sure we will see Stannis in his behavior and manners.
