Obviously it’s a drivers duty to avoid hitting a pedestrian whenever possible, but it’s much easier for a pedestrian to avoid a car than the other way around, that’s just physics.

Not compared to Google Maps on the same device, it doesn’t. The traffic data and routing algorithms Apple Maps uses are very much worse than Google Maps.
