If the girl you mentioned grew up in Victorian England, would she be repressing her bisexuality or would she have simply been straight? In other words, the “true self” may be at least partially environmentally determined.

A person holding a gun up to your head also gives you a choice — that doesn’t mean he isn’t forcing you to act against your will. The point is this: when somebody says that doing X is a choice they imply that doing ~X is not unreasonably difficult.

People can choose whether or not to act on their homosexual inclinations, and the ease with which they can choose not to act on them increases as their rating on the Kinsey scale decreases.
