I would say her actions were ignorant, not evil.

I also (sort of) get her comparison- not many mexicans drink Margaritas and wear sombreros but many tolerate it (or even expect it) at a Mexican restaurant or mexican themed celebration. Still she should know better...

Basically, the human is the boss, and they may override anything with their decisions.
