Actually I don't know the fixed rules for the shows, but in the books since Sam is a true shifter he can change into any animal he has ever seen, like a lion in book eight I believe, he just likes being a collie. The weres and other animal specific weres can only change into a their specific animals.

My guess is that this the story of a different more advanced Space Jockey colony, and that the Space Jockey ship in Alien was just a crashed on. It explains how the crashed ships look so similar.
